the story

My father was a French chef. My mother was a typical Parisian food snob. So, while my friends ate pizza and Chinese take out; I sat down to five star, home cooked meals. Cheese Souffles were the norm in my house. Caviar a childhood favorite. Fresh oysters and sea urchins cracking open over the kitchen sink, a regular occurrence. Butter was our best friend. Wine was medicine. And bread and cheese were staples. But, as I grew up and learned more about nutrition and health I began to play with my food. I wanted to make healthy foods, for myself, that tasted as good as the butter laden apple tarts of my youth. To my surprise others loved my whacky creations and random food pairings. Thus, the Accidental Parisian Cook was born.

Food can either be medicine or posion.

Over the past 50 years, a barrage of overworked parents, and busy schedules have pushed food and nutrition into the backseat. "Fast food" has not only become the norm. But rather, it has become expected. Eating in front of computers. Eating while on the phone. Eating during meetings... We not only want our food fast. But, we want to eat it fast, as well.  Many of us forgetting to stop and digest our food properly. We have mouthes to feed. We have bills to pay. So, we make ourselves available at the expense of our own wellbeing. In the process, we have forgotten how to eat for health. But rather, we eat for comfort. Why? Because we are tired, nutrient deficient, sick and addicted to the very things that are slowly poisoning us. I was guilty of all of these things. As I made the necessary changes to my diet, due to health issues, I soon discovered that not only did I begin to feel better. But that, healthy, organic, local grown foods actually tasted better, too. It is possible to feed our bodies without depriving our soul. It just takes a little dedication and a lot of imagination. Thankfully, I have enough more than enough imagination to share with you. So, if you are ready to explore a world of healthier yummies and nutritious food, I will do the rest for you.

More and more people are turning to a Paleo diet due to health concerns. By eliminating possible inflammation triggers, this diet has been said to aid in keeping auto immune disorders and gut issues at bay. Others praise a slightly more restricted version of the diet dubbed the, "Auto Immune Protocol Diet," which has be said to aid in sending already existing auto immune disorders into remission. No matter the reason, this diet dubbed the "Cave Man" diet has brought a new found awareness of going back to unprocessed, fresh, organic foods. With no grains, no dairy, no sugar, no soy, and no processed foods this diet is supposed to allow our bodies to receive more of the natural occurring nutrients, vitamins, and amino acids that can help our bodies thrive at an optimal level.
